Cornish Pastie
Serves 4
Ingredients
2 Blocks puff pastry
1 spanish onion
2 carrots
2 large potatoes
700 grms minced lamb
1 tbsp chopped parsley
1 bayleaf
1 tsp dried rosemary
2 rashers bacon
Splash of olive oil
Sour Cream to serve
Fry the onion, carrots and bacon for 5 minutes at medium heat – then add all the other ingredients. Cook for 10-15 minutes – add water if too dry.
Cut 9″ rings out of the puff pastry and place a portion of the filling into the middle. Fold over and crimp edges with fingers. Brush with beaten egg and bake at 200c for 20 minutes until golden brown.
Use butter or go to your local western style supermarket – I bet they have ready-made pastry.
you can get away with using butter
Aye dont make them then.
Yes, use 1/2 butter and 1/2 vegetable shortening. Trex in UK;Cisco (I think) in the US. Makes quite good pastry.
Bake some fresh pork, and save the juices. When the juices are cooled in the fridge the white part is the lard. Cook some fresh pork belly like bacon, and the grease left over is lard. Butter won’t do the job. Besides lard has less cholesterol, and saturated fat than butter.
Being vegetarian, we make them with vegetable fats or butter, perhaps you should to?
Any white fat will do – can you get Flora white or Trex?
I used to live in Thailand and used marg or butter to make pastry, and then just before I left I found frozen pastry in the supermarket. It’s a wonderful place isn’t it?
